The cardoon is very similar to the globe artichoke but can grow to 2m plus. From mid summer the flower buds open up like enormous purple thistles and attract all sorts of pollinators. The leaves, which are pinnately lobed, are also striking, adding to the strong architectural impact of the mature plant. Will grow in any fertile soil, shelter from strong winds.
